01 · THE SAP

A water that grew, not one that was bottled.

Pure birch sap, harvested in the brief spring window.

For two or three weeks each spring, when the soil thaws and the days stretch past dusk, the birches of the boreal forest do something quiet and remarkable: they pull water from the ground, push it up through their trunks, and prepare to leaf. That liquid is birch sap.

It is naturally clear, naturally sweet — barely, faintly — and naturally rich in potassium, calcium, magnesium, manganese, zinc, and copper. No additives. No concentrates. No "infused with" anything. The tree did the work.

After the spring window closes, there is no more sap until next year. The trees seal up. The harvest is over. That scarcity is the point.

The taiga is the largest forest on Earth — a green band of birch, pine, and spruce that wraps around the Northern Hemisphere from Latvia through Russia, across Siberia, into Alaska and Canada. It produces more oxygen than the Amazon. It feeds the great rivers. And it grows the trees that make TAIGA possible.

Latvia sits on the western edge of the taiga, at N · 60° — the latitude where the forest is dense enough to harvest, and clean enough to certify. Our birches are not on a plantation. They are in the forest, where they have always been.
